Tilapia Processing And Production

The tilapia processing plant is an integral part of the fish production farm, ensuring a holistic approach to the process, from ovulation to fillet, in an aqua-industrial complex.

Tilapia fish are harvested from the grow-out ponds when they reach a weight of 800 – 1,000 g, and are transferred LIVE in water to ponds near the treatment plant. These large specimens pass through the processing line at the plant in perfect hygienic conditions, thus ensuring a product of the highest quality and reliability. In just 90 minutes they will be transformed into skinless, boneless, clean fillets and packaged in 5-7 and 7-9 ounce packages.

The Process Package constitutes APT’s operations manual for all stages of production. The following is a general list of the items included. The Process Package is prepared for the specific requirements of each of the projects.

Chicken Processing

Filleting is the action of cutting a food into thin and elongated slices, better known as fillets. The main characteristic of this cut is to achieve a certain uniformity in the thickness, length and width of the fillets. To do a good filleting, a sharp and flexible knife is required.
There are different techniques, depending on the nature of the meat. To fillet fish, the head is cut off and a cut is made in the back, from top to bottom, from the back of the head; it is cut along the back and continues down to the tail. Turn the fish over and make the same cut on the other side.
To fillet chicken breasts, remove the skin from the breast, make a cut to separate the meat from the bone and place it on the cutting board. With the help of the hand and a good knife, we remove the fillets.

Beef and Pork Proccesing

The processing of cattle meat is mainly done in cold storage and the consumer almost never sees this process. In recent years, many more people have started raising individual cattle, processing their meat and making their own sausages or hamburgers. Processing cattle meat is an extensive process. Curing and cutting the meat can take up to 2 weeks, and requires a lot of tools. This article will show you how to process beef from a cow. Raw meat is notoriously difficult to cut. However, you can relieve some of the pressure by placing the meat in the freezer. Partially freezing the meat makes it firm, making it easier to work with. Place the meat in the freezer for 30 minutes to an hour. The extra time you spend preparing the meat will make the cutting process much easier for you.
